The invention relates to the diary industry, namely to a technology for catalytic coagulation of the freshly drawn milk. It is proposed a milk catalytic coagulation agent (variants) and processes for obtaining thereof. As coagulation agent is used activated clay of montmorillonite type. The clay is activated either with organic acids from the series of food acids or by thermal treatment of its ammoniacal or calcic form. It is also proposed a process for milk catalytic coagulation using said coagulation agent. The result of the invention consists in obtaining the casein homogenous coagulum. Claims: 7Fig.: 3
