FIELD: food industry.;SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting cinnamon with liquid nitrogen and in separating corresponding miscella, in cutting, drying in SHF field at specified parametres of process and roasting of yacon, in cutting, drying in SHF field at specified parametres of process and convective finish drying of apples, in drying in SHF field at specified parametres of process and convective finish drying of black chokeberry, in mixing yacon, apples and black chokeberry, in soaking of produced mixture with separated miscella simultaneously building pressure up, in successive dropping pressure to atmospheric with simultaneous freezing of mixture and cryo-milling it in medium of precipitated nitrogen.;EFFECT: method facilitates manufacture of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
