FIELD: food industry.;SUBSTANCE: invention refers to food industry, particularly to process of coffee drink production. The method of production of aromatised yacon-apple-black chokeberry drink consists in the following operations. Cocoa husks are extracted with liquid nitrogen and miscella is separated. There are prepared yacon, apples and black chokeberry. Yacon and apples are cut and dried in SHF field to residual moisture 20%. Black chokeberry is dried in SHF field to residual moisture about 20%. Yacon is roasted, while apples and black chokeberry are dried to residual moisture about 5% by a convective method. Further products are mixed at weight ratio 10:9:1, are poured over with separated miscella and soaked at simultaneous pressure build-up; upon which pressure is dropped to atmospheric and mixture is frozen and cryo-milled in medium of liquid nitrogen.;EFFECT: invention expands assortment of coffee substitutes produced by non-waste process.
