The invention relates to a combi steamer for commercial use in a quick-service restaurant and to an associated method for commercially cooking or processing cooking products by means of a combi steamer in a quick-service restaurant. Combi steamers have become very well established for commercial use in quick-service restaurants. Combi steamers are designed to be fully occupied. If individual inserts are inserted into the combi steamer or removed from the combi steamer in a batch cooking process or in a mixed cooking process, the cooking climate can change for the directly adjacent inserts, in particular as a result of a changed air flow. According to the invention, a rack-like frame is provided and cooking climate compartments are defined by means of compartment partitions and the combi steamer is filled independently therefrom by means of cooking product receptacles. The size of the cooking climate compartments is then always unchanged, even during rolling loading. This leads to excellent results in regard to the uniformity of the cooking.
