The present invention relates to a method of preparing fried Chinese weatherfish of a novel composition having excellent flavors and aromas, high preference in consumers, and health benefits; and to fried Chinese weatherfish prepared thereby. According to the present invention, the method comprises the following processes: washing Chinese weatherfish; slicing the flesh of the Chinese weatherfish to obtain Chinese weatherfish slices; coating the Chinese weatherfish slices with a primary roasting sauce containing soju, ginger, perilla seed oil, and sesame seeds; biscuit-firing the Chinese weatherfish slices coated with the primary roasting sauce by using a grill and charcoal fire; frying the biscuit-fired Chinese weatherfish slices mixed with a seasoning sauce containing hot pepper paste, ginger, garlic, sesame seeds, apple juice, kiwi juice, pear juice, hot sauce, and sugar; and setting the fried Chinese weatherfish slices on a stone plate.;COPYRIGHT KIPO 2018
