The kinetics of oxidation of triacylglycerols of sunflower (TGSO) and olive (TGOO) oils in the presence of some amphiphilic compounds (AC) such as fatty alcohol (1-octadecanol),sodium dodecylsulphate (SDS),and cetyltrimethyl ammonium ha-lides:bromide (CTAB),chloride (CTAC),cetylpyridinium bromide (CPB),dicetyl-dimethyl ammonium bromide (DDAB) as well as acetylcholine (AcC) was studied.The lipid hydroperoxide decomposition was found to be a key stage affected by AC.Cationic AC and the fatty alcohols facilitate lipid hydroperoxide decomposition into free radicals thus accelerating the oxidation process.The kinetic parameters characterising the oxidation rate have been determined.The catalytic effect of cat-ionic surfactants on the lipid hydroperoxides decomposition in membrane and further reactions of the radicals formed with cell components for the first time can be regarded as a part of the mechanism of bactericidal action of cationic surfactants.
