山药中多酚氧化酶活性的测定及其护色研究

         

摘要

[Objective]The aim was to study the activity of polyphenoloxidase and prevention of discoloration of Dioscorea opposite. [ Method] Take the fresh Dioscorea opposite as the material, the activity of Polyphenoloxidase was determined by spectrophotometric method. Meanwhile, the effects on the activity of Polyphenoloxidase for the different inhibitors were tested by experiments. [ Result] The results showed that the se lected color fixatives had the color prevention effect in varying degrees and the best inhibitor was oxalic acid. [ Conclusion ] The optimal com posite color prevention formula of Dioscorea opposita was ascorbic acid 10 mg/ml, sodium bisulfite 8 mg/ml, oxalic acid 6 mg/ml and citric acid 1.00%.%[目的]研究山药中多酚氧化酶活性的测定及其护色效果.[方法]以新鲜山药为试验材料,采用分光光度法测定其多酚氧化酶的活力.同时,通过试验分析不同抑制剂对山药多酚氧化酶活力的影响.[结果]所选护色剂均有不同程度的护色作用,其中以草酸的效果为最佳.[结论]山药加工的最佳复合护色配方为:抗坏血酸10 mg/ml,柠檬酸8mg/ml,草酸6mg/ml和亚硫酸氢钠1 mg/ml.
