The present invention relates to a process which is specific to determine and number the yeast Kluyveromyces marxianus. The process involves the addition to a culture medium used as a base for yeasts of a chromogenic substrate, an inductor substrate and a bacterial growth inhibitor antibiotic. When said medium is subjected to the beta -galactosidase activity of Kluyveromyces marxianus, it produces a blue coloration exclusively in the colonies of said yeasts. The usefulness of the culture medium object of the invention is the detection of the kluyveromyces marxianus yeast in the food industry.
