An extract from plant tissue of Stevia containsbactericidal substances which have no adverse effect onintestinal bacteria floras, but selectively act on pathogenicintestinal bacteria, and activity of the substances isextremely improved by the presence of an organic acid, byfermentation, or by fermentation and addition of an organicacid. This bactericide shows no killing effect on Lactobacilliand Bifidobacteria, is of nature origin, has no side effects,and is a selective bactericides against food-borne pathogenicbacteria which keep intestinal bacteria floras in humans andanimals normal.
