PROBLEM TO BE SOLVED: To provide inexpensive, highly practical starch for thermochemical modification which shows little change in starch paste viscosity when cooked after long-term storage.;SOLUTION: The starch for thermochemical modification is prepared by adding an aqueous solution containing an acid and urea to unprocessed starch, wherein the acid is a combination of 30-50 wt.% at least one selected from hydrochloric acid and nitric acid and 50-70 wt.% sulfuric acid. Preferably, the amounts of the acid and urea are 0.02-0.5 wt.% and 0.3-3 wt.%, respectively, based on the weight of starch. The starch for thermochemical modification shows extremely little change in the starch paste viscosity when cooked after long-term storage.;COPYRIGHT: (C)2004,JPO&NCIPI
