PURPOSE: A fermentation device for brewed vinegar is provided to quickly make the vinegar and to maintain optimal temperature conditions. CONSTITUTION: A fermentation device for brewed vinegar comprises: a container for brewed vinegar; and a fermenter for brewing vinegar comprising a main body, a first loess layer(10a), a heating layer(20), a film(30) formed of an insulation material, and a second loess layer(10b) which is placed on the film. The container is made of a wood material and a stopper. The fermenter further comprises a temperature controller(40). A method for making the brewed vinegar comprises: a step of roasting nuruk powder and dissolving the roasted nuruk powder in a pure mineral water; a step of sealing the container containing the nuruk powder and primarily fermenting the container on a fermenter; a step of adding hard-boiled glutinous rice to the container and incubating the container on the fermenter at 30-50 Deg. C.; a step of adding nuruk lump, baked jujube, baked Platycodon grandiflorum, and boiled whole wheat or hog millet into the container; and a step of secondarily fermenting the mixture in the container.
