The invention relates to the use of immobilizing yeasts in biocapsules and to the application thereof in producing sparkling wine prepared from the second alcohol fermentation in the bottle performed by said yeasts. The invention includes producing biocapsules in a suitable concentration and the application of same as biocatalyzers in a particular industrial fermentation process.
