A fat-soluble bamboo leaf antioxidant (eAOB-o) obtained via enzymatic preparation and use thereof. The eAOB-o comprises p-coumaric acid and one or more acyl-modified products of a 5,7-dihydroxy-4H-1-benzopyran-4-ketone derivative; wherein the 5,7-dihydroxy-4H-1-benzopyran-4-ketone derivative is a substituted 5,7-dihydroxy-4H-1-benzopyran-4-ketone; the substitution means a benzopyran ring is substituted in the following ways: any hydrogen atom on the benzene ring portion of a benzopyran ring is substituted by a glycosyl group, and the 2-position of the benzopyran ring is substituted by a phenyl group having one to three hydroxyl substituent groups; wherein the acyl-modification means a hydroxyl group on the glycosyl group is modified by a C8-C18 acyl modifying group; and the molar ratio of the 5,7-dihydroxy-4H-1-benzopyran-4-ketone derivative and the acyl modifying group is 1:0.5-2.
