The present invention relates to a method for preparing Momordica charantia juice comprising the steps of: (a) adding water to Momordica charantia; (b) irradiating infrared rays onto an output of the step (a); (c) ripening and extracting an output of the step (b) at a temperature of 75 to 90 °C for 20 to 72 hours; and (d) sterilizing and vacuum packing an output of the step (c) at a temperature of 100 to 140 °C. Momordica charantia juice prepared by the method of the present invention not only exhibits excellent antioxidation and diabetes improving effects, but also suppresses a bitter taste and increases overall acceptance, thereby exhibiting excellent appealability. Further, Momordica charantia juice of the present invention is capable of being safely applied to food and pharmaceutical compositions.;COPYRIGHT KIPO 2016
