As tall prices lure albacore fishermen to refit their boats to produce sashimi-grade fish, some wonder how the market will hold up. Is there such a thing as too much sushi? With bled, blast-frozen albacore earning 3,000 dollar/ton at the end of the season last year compared to the cannery price of 1,600 dollar/ton for brine-frozen albacore, Paul Hill, owner of the 85-foot Betty H, decided to install a blast-freezing system on his vessel. He had not one but two separate blast-freezing systems installed on his offshore albacore vessel by Integrated Marine Systems of Port Townsend, Washington. "We put in two separate systems because we are out in the middle of the ocean, and if one system were to go down we'd be out of luck," he says. "So if anythinggoes wrong, we wouldn't lose the catch."
