PROBLEM TO BE SOLVED: To provide bound food for tuna sashimi or raw diet, having the same softness, palate feeling, taste and appearance as those of ordinary sashimi, obtained by utilizing tuna-meat broken material.;SOLUTION: The bound food for tuna sashimi is obtained through the following process: mincing the tuna-meat broken material in a prescribed range of temperature at which the material can be kept to be edible; adding oil and fat to the minced material; kneading the mixture; further adding transglutaminase to the kneaded mixture; kneading the mixture; charging the kneaded mixture in a predetermined shaped mold; facilitating enzymatic reaction of the transglutaminase within the prescribed temperature range. The minced broken tuna-meat material charged in the mold is bound so as to be separable from the mold to produce the processed food for sashimi from the broken tuna-meat material.;COPYRIGHT: (C)2007,JPO&INPIT
