摘要

The purpose of this study was to investigate the bacterial count on beef carcasses and to compare the four slaughterhouses in Calvados, Samples were taken by excision method from 233 beef carcasses. Carcasses were sampled for total plate count, Enterobacteriaceae, fecal coliforms, coagulase positive staphylococci, anaerobes and Salmonella, The mean were 3.78 log(10), (CFU/cm(2)) (Colony Forming Unit) for total plate count, 1.42 log(10) (CFU/cm(2)) for Enterobacteriaceae, 0.86 log(10) (CFU/cm(2)) for fecal coliforms, 0.11 log(10) (CFU/cm(2)) for coagulase positive staphyloccoci and 0.26 log(10) (CFU/cm(2)) for anaerobes. Three carcasses were contaminated by Salmonella. Significant differences were observed between slaughterplants for aerobic microorganism counts and Enterobacteriaceae.
