Food giants jostle for a healthy slice of soy markets.

Fuelled by FDA approval of the cholesterol-lowering claims made for soy products, a flurry of activity in acquisitions throughout the world, as the food giants try to take the market opportunity presented, is discussed, as are the other possible health benefits of soy foods, questions over the mechanism of action of soy against cholesterol/heart disease (isoflavone-related), and controversy surrounding claims related thereto. Consumer resistance to genetically modified foods in northern Europe andeffects on this `soy boom' are also considered.
