In 2003, the production of Mozarella and Ricotta cheese and Mascarpone in Italy totalled around 124 300 tons, with an economic value of 935 million euros and accounting for more than 40% of the cheese sold in Italy. 70 000 tons of Mozzarella cheese was sold in 2003, representing an increase of 10% compared with the previous year. Sales of Ricotta cheese, Robiola cheese, Mascarpone, cheese spread and goat cheese increased by 9%, 16, 8, 13 and 4% respectively. The consumption of Mozzarella and Ricotta cheese in different parts of Italy in shown in several graphs, and data are tabulated for the amount and economic value of Mozzarella, Ricotta and goat cheese and of Mascarpone consumed and for the percentages of their sales at different types of shops.
