Salers turn from dairy to beef

THE SALERS breed is France's numerically largest hardy breed. It has 190,000 cows, of which 30,000 are registered and performance-recorded. Over the past 30 years, the Salers has been selected for beef characteristics, despite originally being a milking breed. Breed director, Antoine Bonal, says only 10% of cows are now recognised as dairy animals. The breed is centred on mountains in south-central France. Cows winter on low country, where they-are fed mainly on hay, then with calves are transported to summer pastures in the mountains ranging up to 1500 metres high.
