摘要

1. Aniline hydrochloride was shown to convert α-acetolactate to diacetyl in beer obtained during primary fermentation. 2. The ester of α-acetolactate can be saponified and subsequently converted into diacetyl in finished beer via use of aniline hydrochloride. 3. A mass balance was achieved in the conversion of α-acetolactate to diacetyl and acetoin by utilizing aniline hydrochloride.
