Traditional Thai sweets, or khanom Thai (literally "Thai snacks" or "Thai sweets") are as numerous as they are varied. Subject to many different influences throughout their long history, most have remained intact, incorporating new flavor ways, methods of preparation, and most recently, a decrease in richness, along the way. They stem from traditions both ancient and recent and may be as simple as a peasant sweet of freshly boiled soft palm sugar or as elaborate as a palace dessert that includes intricately carved fruit, syrups perfumed with exotic flowers or scented candles, and golden strands of duck egg yolk cooked in a thick sugar syrup.
