营养强化剂壳寡糖铜、锰螯合物的合成与表征及抗氧化活性

         

摘要

The chitooligosaccharide copper and manganese chelates were synthesized by solid state reaction at room temperature and microwave irradiation method using copper dichloride,manganese sulfate and chitooligosaccharide as raw materials.The chitooligosaccharide chelates were characterized by titration analysis,FTIR,XRD and SEM.The scavenging superoxide anion radical activity of the chitooligosaccharide chelates was investigated using NBT/VB2/methionine superoxide anion radical producing system.The results showed that amino N atoms and hydroxyl O atoms in chitooligosaccharide were coordinated with copper or manganese ions to form stable chelates.The chitooligosaccharide chelates had obvious scavenging effects on superoxide anion radical,and the chelates had higher scavenging activity on superoxide anion radical than chitooligosaccharide.When chelates mass concentration was 3 mg/mL,the scavenging superoxide anion radical activity was higher than 82%.%以CuCl2、MnSO4和壳寡糖为原料,用室温固相法和微波辐射法合成了壳寡糖铜及锰的螯合物,通过滴定分析、红外光谱、XRD、SEM等对壳寡糖螯合物进行了表征,以NBT/VB2/蛋氨酸为超氧阴离子自由基产生、检测体系,对壳寡糖螯合物进行了抗超氧阴离子自由基活性研究.结果表明:壳寡糖中氨基N原子与羟基O原子参与配位,与Cu2+和Mn2+形成了稳定螯合物.壳寡糖螯合物对超氧阴离子自由基具有明显清除作用,且螯合物与壳寡糖相比对超氧阴离子自由基有更高的清除活性.当质量浓度为3 mg/mL时,其螯合物对超氧阴离子自由基的清除率大于82%.
