Adding benzoyl peroxide into wheat flour has been prohibited by the government department of many countries. It is of great importance to detect benzoyl peroxide concentration in wheat flour quickly. This study was aimed at exploring the feasibility of detecting benzoyl peroxide particles in flour using near-infrared hyperspectral reflectance images from 937.5 nm -1653.7 nm. Following image preprocessing (correcting and background removal), the spectrum of each pixel in the sample images was classified by band ratio method. Chemical images were created for the distribution of benzoyl peroxide particles within images of flour mixture samples that were prepared with different concentrations (0.2%, 0.5%, 2% and 5%). The study demonstrated that hyperspectral imaging technique was an effective method for benzoyl peroxide adulteration detection in wheat flour. The method described in this study can also be applied to other chemicals or multi-chemicals adulterant detection in flour.
