摘要

A major process that reduces the quality of tuna flesh is the oxidation of polyunsaturated fatty acids. If dietary supplementation of powerful anti-oxidants such as Vitamin E, Vitamin C and selenium results in their deposition within the flesh, then it is generally believed that lipid oxidation should be reduced (Ruff et al, 2002). However, no information exists as to where such compounds are deposited within the carcass of Southern Bluefin Tuna (SBT). Based on our need to identify appropriate sampling sites for the examination of vitamin supplementation success, we comprehensively mapped the distribution of Vitamin E, Vitamin C and selenium in the carcasses of SBT fed diets containing various combinations of these supplements.
