Beginning with the production technology of instant noodle, the article describes the effect of equipment on products, making emphasis on the requirements f technical flow chart, such as flour mixing, sheet rolling, steaming and frying etc. onequipment, and how the equipment should adapt to these requirements. Moreoverm it makes an introduction of development trend of production equipment in China and Japan in which seals with Vacuum mixing machine, Wide roller, Multo - layer steamer, Highprecision oil temperature controller and advanced electrical controls. Finally, it briefs on the two development trends: microwave dring method and fresh instant noodle.
