Via GC-EI-MS and GC-CI-MS, the use of deuterated ketoximes assists in the unambiguous identification of common fructosyl-amino acids found in fruits and provides a means for their quantitation as their per-O-TMS derivatives of n-butyl(d_n)-ketoximes. Characteristic fragment ions by EI that report both the amino acid side-chain and the respective deuteratedketoximeare observed at high relative abundances at M -295 and M -117.
