Apple fruit must be harvested at an acceptable stage of maturity and carefully managed in the postharvest environment to deliver optimal fruit quality to the consumer. Many of the changes that occur during fruit ripening, including increases in respiration and aroma production and softening of the apple flesh are triggered by an autocatalytic rise in ethylene production. Fruit maturation is managed in commercial orchards by preharvest application of the ethylene biosynthesis inhibitor aminoethoxyvinylglycine (AVG, ReTain, Valent Biosciences Corporation, Libertyville, IL) or by postharvest treatment with the ethylene action inhibitor 1-methylcyclopropene (1-MCP; SmartFresh; AgroFresh Inc., Springhouse, PA).
