The current invention relates to chitin or its derivative chitosan or chitosan hydrochloride wherein said chitin or said derivative have an α-crystal structure and a crystallinity of less than 80%. The current invention also relates to a composition comprising chitin or its derivative chitosan or chitosan hydrochloride. The current invention also relates to a coating for agricultural plants, fruits or vegetables.In addition, the current invention relates to a use of chitin or its derivative chitosan or chitosan hydrochloride, the composition or the coating in pre- and post-harvest application of plants, fruits and vegetables or to control pre- or postharvest diseases.Also, the current invention relates to a method of protecting a plant, fruit or vegetable against pre- or postharvest decay, to a method of curing a plant, fruit or vegetable of pre- or postharvest decay and to a method for coating plants, fruits or vegetables.
