Wine and spirit prodn. comprises crushing grapes which are free of bad or badly damaged grapes to form a grape juice, fermenting the grape juice under controlled conditions of time, temperature and preservation to form a base wine which is potable, but terminating fermentation while the Beaume is still 4, heating the base wine in a still to a sufficient temp. to evaporate therefrom volatile oils feint, and most of the alchols, and cooling and bottling the base wine residue while retaining it under sterile conditions.
