The foam separator is pref. mounted in a separating vessel which is connected to the fermenting vessel, or to several fermenting vessels simultaneously or consecutively. The separator, which operates with rotary conical plates, allows elimination of the previously required unfilled space for the foam, as the foam is continuously separated into the gas which passes out via the hollow shaft, and into the liquid, and optionally into solid particles whic are cast back into the vessel. The use of the separator also increases the bitterness of the beer by approx. 6% and allows the required bitterness to be obtained with a smaller quantity of hops.
