A method and apparatus for removing the bitter principles from bitter lupins for food purposes with simultaneous concentration of the bitter principles essentially consists in very finely milling the bitter lupins, preferably in a bead mill, and subsequently subjecting the milled lupins to stepwise washing and extraction on the countercurrent principle, initially with solutions of water and extractives from previously washed lupins and lastly only with water. The washed filter cake is dried and comminuted in order to be usable as human or animal food. The extract solutions are likewise dried in order to obtain the alkaloids with their concomitant substances in dried form. The apparatus for carrying out the process has an extractor and a plurality of containers which are connected together and to the extractor, where the extractor has a fine-mesh filter fabric on which the extraction mass is separated from the extract solutions. The introduction of heat is not necessary for washing out the bitter principles.
