Heat transfer from a wall of heat conductive material, e.g. a metal reactor vessel is effected by directing a liquid, pref. water, on to the wall surface for the liquid to accelerate down over the wall surface, increasing heat transfer as a function of velocity. Suitable for use on jackets for boilers, heat exchangers, etc., operating at temps. approaching that of the boiling pt. of the liquid, esp. vessels in a dairy, making processed or cream cheeses. The vessels may be of stainless steel, copper or other metals, with the water being discharged from an annular manifold alongside the rim of the vessel. The flowing film of liquid follows the radiused surface of the base of the vessel before recovery by a coaxial drain at the base of the jacket.
