PURPOSE:To prepare a yam ice cream rich in edible fiber, having low calorific value, meltable in the palate and resistant to discoloration by quickly freezing and crushing yam with liquid nitrogen, etc., mixing the yam powder to an ice cream mix at a specific ratio and using the obtained mixture as a raw material. CONSTITUTION:Yam is quickly frozen with liquid nitrogen or liquefied carbon dioxide gas and crushed. The obtained yam powder is mixed to an ice cream mix in an amount of 5 to 40wt.% and the obtained mixture is used as a raw material for the objective ice cream.
