In prodn. of ethanol from raw materials rich in protein and contg. starch, e.g. legumes, where the raw material are ground, the starch is degraded enzymatically or by acid catalysis, to fermentable sugars, and the sugars are converted to ethanol by fermentation, the ground raw materials are mashed in a liq. compsn., and the proteins are washed out before starch breakdown. The solid particles, contg. most of the starch, ar sepd. from the mash, and the proteins are pptd. from the wash liq. by raising the temp. to 50-90 (60-70) deg.C. and lowering the pH to 1.0-5.0 (2.5-4.5).
