PROBLEM TO BE SOLVED: To provide a method for producing dried pasta, capable of effectively preventing the flavor deterioration or color tone darkening of pasta during its preservation after subjected to heat sterilization treatment, and to provide a method for producing heat-sterilized pasta using the above dried pasta. ;SOLUTION: This method for producing dried pasta comprises preparing antioxidant-contg. pasta followed by subjecting the resultant pasta to drying treatment so as to keep its temperature at 65-90°C for 90 min or longer. The other objective method for producing heat-sterilized pasta comprises boiling the dried pasta obtained above followed by cooling the resultant pasta and then subjecting the cooled pasta to heat sterilization treatment.;COPYRIGHT: (C)1999,JPO
