PROBLEM TO BE SOLVED: To provide a method for manufacturing pistachio dried product capable of attaining pistachio processed product showing a nice tooth contact feeling, odor and superior taste.;SOLUTION: There is provided a method for manufacturing a pistachio dried product having moisture content of 4 to 7 wt.% by preparing a shelled pistachio as a raw material and processing the pistachio through both a primary drying and a secondary drying. The aforesaid primary drying is carried out by reducing the moisture content down to 8 to 16 wt.% at a temperature not exceeding 70°C.;COPYRIGHT: (C)2001,JPO
