PURPOSE: A method for producing high molecule water-soluble chitosan and its composition useful for reducing body fat are provided, thereby, reducing body weight and lipid and protein level in blood. CONSTITUTION: The method for producing high molecule water-soluble chitosan comprises the steps of: treating chitosan from the shells of shrimps and crabs with acids; treating the chitosan with 0.1 to 15 wt.% of enzyme selected from chitosinase, chitinase, cellulase and lysozyme, along with applying ultrasonic wave for 20 to 90 minutes; drying and dissolving the chitosan in fresh water to produce the chitosan having 220,000 to 1,000,000 molecular weight; and freeze-drying the chitosan to produce high molecule water-soluble chitosan. The composition useful for reducing body fat comprises the high molecule water-soluble chitosan in an amount of 0.001 to 100%.
