PURPOSE: Compounds, 3-O--D-glucopyranoside and quercetin 3-O--D-glucopyranoside, for inhibiting protein saccharification, a preparation method thereof and a composition containing an ethanol extract of Eucommia ulmoides OLIV. for inhibiting protein saccharification are provided, thereby inhibiting deterioration of proteins in foods, the aging and adult diseases. CONSTITUTION: The process for preparing kaempferol 3-O--D-glucopyranoside and quercetin 3-O--D-glucopyranoside for inhibiting protein saccharification comprises the steps of: (1) drying and pulverizing Eucommia ulmoides OLIV. and extracting it with ethanol at room temperature; (2) filtering the ethanol extract of Eucommia ulmoides OLIV. and concentrating it under vacuum condition; (3) diluting the concentrate with distilled water; (4) adding ethylacetate into the diluted Eucommia ulmoides OLIV. solution to separate an ethylacetate layer; and (5) concentrating the ethylacetate layer and subjecting it to chromatography. The composition for inhibiting protein saccharification contains quercetin 3-O--L arabinopyranosil(12)--d glucopyranoside, kaempferol 3-O--D-glucopyranoside and quercetin 3-O--D-glucopyranoside.
