"Functional food, probiotic composition, composition and production process alimentu00eccia functional food fermented soy containing agents, probiotics and prebiotics.The present invention relates to a process for the production of a fermented food or drink from water soluble extract of soybean.Containing probiotic agents (living microorganisms) and enriched or not with oligosaccharides prebiotics; functional food soy produced by this process; the probiotic composition U.Tilizada; and the composition of food symbiotic.More specifically, the products concerned are obtained through the fermentation of water-soluble extract of soybean by bacteria of the genera Lactobacillus spp., Bifidobacterium sp.Pure or in mixture, under optimal conditions of the process, with the addition or not of a syrup of sugar containing fructose, glucose, sucrose and fruto oligosaccharides.In order to obtain a food supplement, preferably a drink, with pharmaceutical properties, providing benefits to the health of the host animal.It is important to note that the food or the food composition of the present invention must have sufficient stability to maintain its pharmaceutical properties for a long period.Ensuring that its benefits are present during the period of transport, storage, sale and consumption.
