Provided are immunostimulating polysaccharides isolated from Curcuma xanthorrhiza, which are safe materials, activate macrophage, and prevent and treat immune-related diseases including cancers, and a manufacturing method thereof. The method for manufacturing immunostimulating polysaccharides isolated from Curcuma xanthorrhiza comprises the steps of: (S1) preparing powder of Curcuma xanthorrhiza Roxb.; (S2) extracting the powder with organic solvent, and then performing filtration or centrifugation to obtain residue; (S3) subjecting the residue to extraction to prepare a polysaccharide-containing solution; (S4) adding amylase to the polysaccharide-containing solution to remove starch; (S5) precipitating polysaccharides; and (S6) purifying the polysaccharides.
