The lactic acid bacteria strains Pediococcus pentosaceus CPC0511 (KCCM10867P) of new vegetables has excellent acidproof resistance, bile acid resistance, salt tolerance and antibacterial effect are simultaneously cultured in culture medium, at 15-45 DEG C by carbon source, nitrogen source, vitamin and mineral composition 10-72 hours.
