PROBLEM TO BE SOLVED: To provide a batter flour mix retaining the deliciousness of ingredients from a standpoint of preventing the escape of the palatability of ingredients, and also excellent in texture such as mouth sensation and teeth sensation of coating, or external appearance of coating.;SOLUTION: The batter flour mix includes (a) one kind of saccharide selected from trehalose, sorbitol, and maltitol, and (b) acetylated starch or etherified starch.
