PURPOSE: A method for producing a honey-fermented wine using white rice and Nuruk(fermentation starter) is provided to enhance fresh taste and to shorten fermentation period. CONSTITUTION: A method for manufacturing a honey-fermented wine comprises: a step of sterilizing honey-hydrolyzed liquid at 50-70C to obtain a honey hydrolysate liquid; a step of cooling the honey-hydrolysate liquid at 15-25C and filtering; a step of mixing hard-boiled white rice with white Nuruk(fermentation starter) and culturing; a step of fermenting the mixture; and a step of filtering and sterilizing.
