PROBLEM TO BE SOLVED: To provide a Wasabi (Wasabia japonica Matsum) flavor enhancing agent giving and enhancing just ground raw Wasabia japonica aroma and Wasabia japonica flavor and taste fresh, juicy and having oily feeling and rhizome feeling, to provide a Wasabi flavor composition, and to provide a method for enhancing Wasabia japonica flavor of food and drink.;SOLUTION: This method for enhancing the Eutrema japonica aroma and flavor and taste includes adding to the Eutrema japonica flavor composition or food and drink, a small amount of one kind or a mixture of at least two kinds selected from 3-methyl--decalactone, 3-methyl-2-butene-1-thiol, 2-isopropyl-3-methoxypyrazine, 2-isobutyl-3-methoxypyrazine, and trans-4,5-epoxy-(E)-2-decenal.;COPYRIGHT: (C)2012,JPO&INPIT
