PROBLEM TO BE SOLVED: To provide a method by which noodle snack sweet stuffs excellent in palate feeling and flavor can be obtained even in the case the crosssectional size of noodles is large and a main raw material is grain flour other than wheat flour.;SOLUTION: Noodle snack sweet stuffs are obtained by carrying out a mixing step, a steaming and kneading step, kneading step, a rolling step, a cooling step, a cutting step, a frying step, a finishing step in this order. That is, different from a conventional method in which noodle lines is formed from dough and thereafter steamed, the noodle lines is formed from pregelatinized dough obtained by the steaming and kneading step. A wetting step providing moisture to the noodle lines after the cutting step is not carried out between the cutting step and the frying step.;COPYRIGHT: (C)2013,JPO&INPIT
