Determination of nucleotides in foods by liquid ion pair chromatography with detection by photodiode coupled to mass spectrometry time of flight dual ionization operating in negative mode (HPLC / ESI-APCI-TOF-MS). The method allows rapid determination of five nucleotides monophosphate allowed in baby food (cytidine 5? Monophosphate, uridine 5'? Monophosphate, adenosine 5? Monophosphate, Inosine 5? Monophosphate and guanosine 5? Monophosphate), and includes the prior protein precipitation food and direct analysis of the nucleotides in the resulting extract by ion-pair HPLC using isocratic elution. The recovery was obtained for samples fortified satisfactory for all analytes. The proposed method allows the determination of single nucleotide authorized and has been successfully applied to the analysis of different samples of infant and functional, such as purees, cereals and food jars.
