A process for making a confection containing at least 80 wt.% sweetener and at least 60 wt.% of the sweetener is in crystal form. The confection made by this process is hard and brittle and crunchy, and can be made as an individual confection piece or can be combined with at least one other confection piece to create a multilayered confection exhibiting a collection of textures. Moreover, the present invention further provides a process for making a confection comprising the steps of mixing a confection mass containing at least 80 wt.% sweetener; melting the confection mass; crystallizing the confection mass, such that at least 60 wt% of the sweetener is in crystal form; and forming the confection mass into individual pieces.
