PURPOSE: A manufacturing method of dried persimmon and the slice of dried persimmon is provided to intake anthocyanin of black chokeberry fruit by adding black chokeberry concentrate. CONSTITUTION: Skin-peeled raw persimmon is dipped in the diluted solution of black chokeberry extract fluid for 2-5 minutes(S1). Dipped raw persimmon is naturally dried at 5-25deg.C(S2). The diluted solution of the black chokeberry extract fluid is sprayed on the surface of dried persimmon several times(S3). The persimmon on which the diluted solution of the black chokeberry extract fluid is dried at 5-25deg.C for 10 days(S4). The spraying stage and natural-drying stage are repeatedly performed several times. The black chokeberry extract fluid is refined by removing impurities using the column chromatography. The black chokeberry extract fluid is manufactured by filtering after mixing black chokeberry fruits with fermenting alcohol with 85-99% alcohol. The diluted solution of the black chokeberry extract fluid is manufactured by mixing the black chokeberry extract fluid 20-40 weight% and fermenting alcohol with 85-99% alcohol 60-80 weight%.
