MEDIA CONTAINING DEFATTED RICE BRAN AND METHODS FOR PREPARING HIGH-CONCENTRATED GABA USING THE SAME

The present invention relates to (a) a medium for lactic acid bacteria comprising defatted rice bran as a main fermenting source and a GABA manufacturing method by lactic acid bacteria in the medium. According to the present invention, the defatted rice bran is contained in the medium as a main fermenting source so that a final product contains various nutrients of the main fermenting source and keeps specific properties of each component thereby obtaining nutritionally excellent GABA-containing fermentation products. In addition, by directly inserting glutamic acid or the salts into the medium, the conversion rate to GABA is high thereby producing more than 80 % of a high concentration of GABA and using it as both liquefied or powder materials depending on products which are finally applied.
